
Martha Stewart's French Meringue Cookies
Martha Stewart has shared a vibrant dessert recipe that exudes Bridgerton vibes. It's a French dessert with a rainbow of colors that's perfect for any summer get-together. The crispy texture on the outside and chewy texture on the inside makes it irresistibly delicious.
Ingredients:
- 4 large egg whites, room temperature
- 1/4 teaspoon kosher salt
- 1/2 teaspoon white-wine vinegar
- 1 cup sugar
- 1/2 teaspoon pure vanilla extract
- Gel food coloring (red for raspberry, orange for orange, brown for chocolate)
Directions:
- Preheat your oven to 200°F and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk the egg whites and kosher salt in medium speed until soft peaks form.
- Add white-wine vinegar and continue whisking in medium speed until stiff peaks form.
- Gradually add sugar and whisk in high speed until the mixture is glossy and stiff. It should take about 7 minutes.
- Using a spatula, fold in the vanilla extract and gel food coloring until you achieve the desired color.
- Transfer the mixture to a piping bag and pipe 2-inch sized mounds onto the prepared baking sheet
- Bake for 2 hours or until the meringue is crisp and dry but not browned.
- Let the meringues cool completely on a wire rack to maintain their shape and flavor. You can store the meringues in the freezer for up to a month.
Note: Do not bake on a humid day or else humidity may affect the meringue texture. You can also switch up the flavors by trying out raspberry and orange aside from chocolate.
