Besan ka Cheela: A Vegan and Gluten-Free Breakfast Dish

Introduction

Besan ka cheela is a savory pancake made from gram (chickpea) flour. This vegan and gluten-free dish is a childhood favorite of Rohan Bhargava, the founder and artistic director of Rovaco Dance Company. For Bhargava, cooking is a form of love and a way to share his Indian culture and hospitality tradition with others.

Ingredients

  • 1 cup gram flour
  • 1/2 cup water
  • 1/4 cup finely chopped onions
  • 1 green chili, finely chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • Oil for cooking

Directions

  1. In a mixing bowl, combine gram flour and water to form a smooth batter.
  2. Add finely chopped onions, green chili, turmeric powder, red chili powder, cumin powder, coriander powder, and salt to taste. Mix well.
  3. Heat a non-stick pan on medium heat. Add a few drops of oil and spread it around the pan.
  4. Pour a ladleful of batter onto the pan and spread it evenly in a circular motion.
  5. Cook for a minute or two until the bottom is golden brown. Flip and cook the other side until golden brown and crisp.
  6. Repeat the process with the remaining batter.
  7. Serve hot with green chutney or ketchup.

If desired, besan ka cheela can also be topped with chopped tomatoes, cilantro, and grated cheese.
