
Besan ka Cheela: A Vegan and Gluten-Free Breakfast Dish
Introduction
Besan ka cheela is a savory pancake made from gram (chickpea) flour. This vegan and gluten-free dish is a childhood favorite of Rohan Bhargava, the founder and artistic director of Rovaco Dance Company. For Bhargava, cooking is a form of love and a way to share his Indian culture and hospitality tradition with others.
Ingredients
- 1 cup gram flour
- 1/2 cup water
- 1/4 cup finely chopped onions
- 1 green chili, finely chopped
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- Oil for cooking
Directions
- In a mixing bowl, combine gram flour and water to form a smooth batter.
- Add finely chopped onions, green chili, turmeric powder, red chili powder, cumin powder, coriander powder, and salt to taste. Mix well.
- Heat a non-stick pan on medium heat. Add a few drops of oil and spread it around the pan.
- Pour a ladleful of batter onto the pan and spread it evenly in a circular motion.
- Cook for a minute or two until the bottom is golden brown. Flip and cook the other side until golden brown and crisp.
- Repeat the process with the remaining batter.
- Serve hot with green chutney or ketchup.
If desired, besan ka cheela can also be topped with chopped tomatoes, cilantro, and grated cheese.
