
Healthy Recipe: High-Protein Chicken and Broccoli Stir Fry

Ingredients:
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- 4 cups broccoli florets
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, thinly sliced
Directions:
- In a large bowl, toss the chicken with the cornstarch until well coated.
- In a wok or large skillet, heat the olive oil over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5 minutes. Remove the chicken to a plate and set aside.
- Add the broccoli, garlic, and ginger to the same wok or skillet. Cook for 3-4 minutes, stirring occasionally, until the broccoli is tender-crisp.
- In a small bowl, whisk together the soy sauce, honey, and red pepper flakes (if using). Pour the sauce over the broccoli and cook for 1-2 minutes, or until the sauce has thickened slightly.
- Return the chicken to the wok or skillet and stir to combine with the sauce and broccoli. Cook for an additional minute or two, until everything is heated through. Serve hot, garnished with sliced green onions.
