A Cookbook Club with a Unique Twist

The newest book club at the North Road library is unlike any other. The Page to Plate Club focuses on cookbooks and it's accurately called "mouthwatering." Members of the club meet monthly on the fourth Wednesday, and bring their own dishes with the library providing the utensils, tables and beverages.

Recipe: Tomato, Watermelon and Feta Salad

This refreshing and flavorful salad is perfect for summer gatherings. Here's what you'll need:

  • 4 cups cubed seedless watermelon
  • 1 1/2 cups diced fresh tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the watermelon, tomatoes, feta cheese, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 1 hour before serving.
