
Salvadoran Quesadilla Recipe
Quesadilla, a sweet bread similar to cake, is a popular snack in El Salvador. This recipe uses parmesan cheese as a substitute for queso duro blando, a Salvadoran aged cheese, which is not as readily available in the US. However, the two cheeses share similar flavors, making parmesan an excellent alternative.
Ingredients:
- 2 cups all-purpose flour, sifted
- ½ cup sugar
- 8 egg whites
- 4 egg yolks
- 1 cup milk
- 1 cup crema Salvadoreña or crème fraîche
- 1 cup grated parmesan cheese
- Butter, for greasing the pan
Directions:
- Preheat oven to 350°F (175°C).
- Beat egg yolks with sugar until creamy.
- Grate parmesan cheese and stir it into the egg yolk mixture, followed by milk and crema Salvadoreña.
- Add sifted flour to the mixture in batches and stir to combine.
- In a separate bowl, beat egg whites until stiff peaks form.
- Fold the egg whites into the flour mixture, creating soft peaks for tenderness.
- Grease a 9-inch cake pan with butter and pour the mixture into it.
- Bake for approximately 35-40 minutes or until golden brown, with a slightly crispy exterior.
- Let the quesadilla cool down before slicing it into triangles and serve with hot coffee.
