Salvadoran Quesadilla Recipe

Quesadilla, a sweet bread similar to cake, is a popular snack in El Salvador. This recipe uses parmesan cheese as a substitute for queso duro blando, a Salvadoran aged cheese, which is not as readily available in the US. However, the two cheeses share similar flavors, making parmesan an excellent alternative.

Ingredients:

  • 2 cups all-purpose flour, sifted
  • ½ cup sugar
  • 8 egg whites
  • 4 egg yolks
  • 1 cup milk
  • 1 cup crema Salvadoreña or crème fraîche
  • 1 cup grated parmesan cheese
  • Butter, for greasing the pan

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Beat egg yolks with sugar until creamy.
  3. Grate parmesan cheese and stir it into the egg yolk mixture, followed by milk and crema Salvadoreña.
  4. Add sifted flour to the mixture in batches and stir to combine.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Fold the egg whites into the flour mixture, creating soft peaks for tenderness.
  7. Grease a 9-inch cake pan with butter and pour the mixture into it.
  8. Bake for approximately 35-40 minutes or until golden brown, with a slightly crispy exterior.
  9. Let the quesadilla cool down before slicing it into triangles and serve with hot coffee.
