Fried Rice Recipe

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas and carrots, thawed
  • 1/4 cup sliced green onions

Directions:

  1. Heat a large skillet or wok over high heat. Add the vegetable oil and swirl to coat the bottom of the pan.
  2. Add the beaten eggs to the pan and let cook undisturbed for about 1 minute, or until set. Use a spatula to break the eggs into small pieces and transfer to a plate.
  3. Add the chopped onion to the pan and cook for 2-3 minutes, or until softened. Add the minced garlic and cook for an additional 30 seconds.
  4. Add the cooked rice, soy sauce, and black pepper to the pan and toss to combine with the onion and garlic.
  5. Add the peas and carrots to the pan and continue to cook, stirring occasionally, for 3-4 minutes, or until cooked through.
  6. Add the cooked eggs and sliced green onions to the pan and stir to combine. Cook for an additional 1-2 minutes, or until everything is heated through.
  7. Serve hot and enjoy!
