Strawberry and Mascarpone Tart

This strawberry-flavored dessert takes inspiration from crème légère, in which pastry cream is lightened up with whipped cream. In this case, mascarpone is loosened up in a mixer with a touch of vanilla and folded in with whipped cream to create an easy no-bake version. Finish it off with strawberries glazed in strawberry jam and balsamic.

Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream, cold
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 pound strawberries, sliced lengthwise
  • 1/4 cup strawberry jam
  • 1 tbsp balsamic vinegar
  • Graham cracker crust (9 inches)

Directions

  1. In the bowl of a mixer, beat the mascarpone cheese with sugar and vanilla until smooth. Pour in the heavy cream and continue to beat until the mixture holds a soft peak when you lift the whisk out. Cover the bowl and place in the fridge for at least 30 minutes.
  2. In a small saucepan, mix apple jelly (or strawberry jam) and balsamic vinegar until uniform. Heat over low heat and stir until the jam melts. Brush over the strawberries.
  3. Prepare the graham cracker crust by crushing graham crackers (10 full crackers) in a ziplock bag using a rolling pin. Mix in 1/4 cup melted unsalted butter, 2 tbsp sugar and 1/8 tsp kosher salt until uniform. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate for at least 30 minutes.
  4. To assemble, spread the mascarpone mixture evenly over the graham cracker crust. Place the prepared strawberries on top of the mixture, arranging them as desired. Serve immediately or cover and refrigerate until ready to serve.
