Rabdi Mango Delight Recipe

Rabdi is a delicious traditional Indian dessert made by thickening milk. This variation of the dessert enhances the flavour by adding the refreshing taste of mango. Here's how you make it:

Ingredients:

  • 1 litre full-fat milk
  • 1 cup mango pulp
  • 1/2 cup sugar
  • 1/4 tsp cardamom powder
  • 8-10 saffron strands (optional)
  • 1/4 cup chopped nuts (almonds, pistachios)
  • 1/4 cup chopped mango pieces

Instructions:

  1. Simmer milk in a large pot over a medium flame until it reduces by half, stirring frequently. This should take around 30-40 minutes.
  2. Add sugar, cardamom powder and saffron strands and stir well.
  3. Add the mango pulp and mix well. Simmer until the mixture thickens to a rabdi-like consistency. This should take around 10-15 minutes more.
  4. Refrigerate the mango rabdi for 2-3 hours and allow it to chill completely.
  5. Before serving, garnish with chopped nuts and mango pieces.
