Red Drink Water Ice Recipe for Juneteenth
Red Drink Water Ice is a refreshing and meaningful addition to any Juneteenth celebration. The color red symbolizes the blood shed by enslaved people and represents strength and spiritual significance that predates the slave trade.
Historians believe that the tradition of red drink originated in West Africa, where hibiscus tea was commonly served. In areas where hibiscus was not easily grown, berries were used as flavoring and coloring agents. Over time, the tradition evolved and red drink became more accessible through convenient sources like Big Red Soda or Kool-Aid.
Ingredients:
- 2 pounds fresh strawberries, hulled and halved
- 1/4 cup citric acid or 1 tablespoon lemon juice
- 1 cup sugar
- 4 cups water
- Ice cubes
Directions:
- For the strawberry syrup, combine sugar and water in a saucepan. Bring to a boil over medium-high heat, then reduce heat to medium and stir until sugar is dissolved. Remove from heat and let cool for 30 minutes. Pour the syrup through a fine-mesh sieve to remove any solids. Chill the syrup in an airtight container in the refrigerator for up to 2 weeks.
- For the strawberry puree, in the bowl of a large food processor, combine the strawberries and citric acid (or lemon juice). Cover and process until smooth. Transfer to an 8-cup freezer container and freeze until firm, 3 hours to overnight.
- Using a fork, break the frozen puree into 1-inch chunks.
- In the bowl of a large food processor, combine the chunks of frozen puree, strawberry syrup, and ice cubes. Cover and process until the mixture has an even, icy texture, 3 to 5 minutes. Return the mixture to the freezer container and freeze for 1 to 2 hours before serving to allow it to "reset."
- Serve the Red Drink Water Ice with a spoon and enjoy!
Note: Water ice can be reblended up to three times for the perfect texture.
