Ingredients:

  • 1 ¼ cups plain flour
  • ½ cup cornflour
  • ⅓ cup caster sugar
  • 200g unsalted butter
  • 1 tsp vanilla extract
  • 1 egg yolk
  • Salted Caramel or Cherry Bakewell filling

Directions:

  1. Preheat oven to 200°C/180°C fan/gas mark 6 and line a baking tray with baking paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Add in the egg yolk and vanilla extract, mixing well.
  4. Sift in the plain and cornflour, and mix until a dough forms.
  5. Divide the dough in half, and shape each half into a log (approx. 5cm wide).
  6. Wrap each log in cling film and chill in the fridge for 30 minutes.
  7. Remove logs from fridge and cut into 1cm-thick slices.
  8. Place onto the lined baking tray, and bake for 12-15 minutes until golden brown.
  9. Once cooled, sandwich two biscuits together with Salted Caramel or Cherry Bakewell filling.
