About the Recipe

This recipe is a perfect choice to welcome the fall season. The flavors and aroma of this dish will surely remind you of the warmth and coziness of autumn. And the best part is that it's easy to make and delicious to eat!

Ingredients:

  • 1 lb. of ground beef
  • 1 cup of diced onions
  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 3 cloves of garlic, minced
  • 2 tbsp. of tomato paste
  • 4 cups of beef broth
  • 1 can of diced tomatoes
  • 1 cup of barley
  • 2 bay leaves
  • 1 tsp. of dried thyme
  • Salt and pepper to taste

Directions:

  1. In a large pot over medium-high heat, cook the ground beef until browned. Drain the excess fat and set the beef aside.
  2. In the same pot, sauté the onions, carrots, celery, and garlic until the vegetables are tender.
  3. Add the tomato paste and stir for a minute.
  4. Pour in the beef broth and diced tomatoes, then add the barley, bay leaves, thyme, cooked beef, salt, and pepper.
  5. Bring the mixture to a boil then reduce the heat to low and let it simmer for about 30-40 minutes or until the barley is tender and the soup is thickened.
  6. Remove the bay leaves and serve hot.
