Warm and Hearty Chicken Pot Pie Recipe

Ingredients:
- 1 pound boneless, skinless chicken breast, diced into small pieces
- 1/2 cup butter
- 1/2 cup flour
- 1 1/4 cups chicken broth
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 1 cup frozen carrots
- 1/4 cup chopped onion
- 2 pre-made pie crusts
- 1 egg, lightly beaten
Directions:
- Preheat the oven to 425°F.
- In a large skillet, cook the diced chicken until browned and no longer pink. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add onions and cook until translucent.
- Whisk in the flour until combined and cook for 2-3 minutes until golden brown.
- Slowly whisk in chicken broth and milk, stirring constantly until mixture is smooth.
- Add salt, pepper, frozen peas, frozen carrots, and cooked chicken into the sauce mixture. Stir until well combined.
- Pour chicken mixture into a 9-inch baking dish.
- Place one pie crust over the top of the chicken mixture, cutting off any excess dough. Trim the edges with a knife and make several small slits in the top of the crust to allow steam to escape.
- Brush the beaten egg over the top of the crust.
- Bake for 30-35 minutes or until the crust is golden brown and the filling is hot and bubbly.
- Cool for 5-10 minutes before serving.
