Slow Cooker Chicken and Vegetables Recipe

Ingredients:
- 4 skinless, boneless chicken breasts
- 1 cup baby carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup sliced mushrooms
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 cup chicken broth
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Salt and pepper to taste
Directions:
- Place chicken breasts in the slow cooker and season with garlic powder, dried thyme, dried parsley, salt, and pepper.
- Add baby carrots, celery, onion, and mushrooms on top of the chicken.
- Pour chicken broth over the vegetables and chicken in the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender.
- Remove chicken and vegetables from the slow cooker and place on a serving platter.
- In a small bowl, whisk together cornstarch and cold water until smooth.
- Stir cornstarch mixture into the slow cooker liquid and cook on high for 10-15 minutes or until the sauce has thickened.
- Serve the chicken and vegetables with the thickened sauce on top.
