A Savory Spinach and Feta Omelette Recipe
If you're in the mood for something quick, easy, and healthy for breakfast, look no further than this delicious spinach and feta omelette!
Ingredients:
- 2 large eggs
- 1 tablespoon olive oil
- 1/4 cup fresh spinach leaves, washed and chopped
- 1/4 cup crumbled feta cheese
- Salt and pepper, to taste
Directions:
- Whisk the eggs together in a small bowl with a pinch of salt and pepper. Set aside.
- Heat the olive oil in a nonstick skillet over medium-high heat.
- Add the chopped spinach leaves to the skillet and season them with salt and pepper. Cook, stirring occasionally, until the spinach is wilted and tender, about 3-4 minutes.
- Pour the whisked eggs into the skillet and let them cook for 30 seconds or so.
- Sprinkle the crumbled feta cheese over half of the omelette.
- Using a spatula, fold the other half of the omelette over the cheese and cook for another minute or so until the cheese is melted and the eggs are cooked through.
- Slide the omelette out of the skillet onto a plate and serve immediately.
