A Savory Spinach and Feta Omelette Recipe

If you're in the mood for something quick, easy, and healthy for breakfast, look no further than this delicious spinach and feta omelette!

Ingredients:

  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/4 cup fresh spinach leaves, washed and chopped
  • 1/4 cup crumbled feta cheese
  • Salt and pepper, to taste

Directions:

  1. Whisk the eggs together in a small bowl with a pinch of salt and pepper. Set aside.
  2. Heat the olive oil in a nonstick skillet over medium-high heat.
  3. Add the chopped spinach leaves to the skillet and season them with salt and pepper. Cook, stirring occasionally, until the spinach is wilted and tender, about 3-4 minutes.
  4. Pour the whisked eggs into the skillet and let them cook for 30 seconds or so.
  5. Sprinkle the crumbled feta cheese over half of the omelette.
  6. Using a spatula, fold the other half of the omelette over the cheese and cook for another minute or so until the cheese is melted and the eggs are cooked through.
  7. Slide the omelette out of the skillet onto a plate and serve immediately.
