Pressure Cooker Chocolate Cake Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup water
  • For the ganache:
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp butter
  • Assorted fruits and sugar for garnish

Directions:

  1. In a mixing bowl, whisk together sugar, vegetable oil, eggs, vanilla extract, and water until well combined.
  2. Sift in the flour, cocoa powder, baking powder, baking soda, and salt. Mix until smooth and free from lumps.
  3. Grease a 7-inch cake tin with butter or oil.
  4. Pour the batter into the cake tin and tap it gently to release any air bubbles.
  5. Preheat the pressure cooker on medium-high heat. Remove the gasket and weight from the lid.
  6. Place the cake tin inside the cooker. Close the lid and cook on medium heat for 30-45 minutes without the whistle.
  7. Check if the cake is fully baked using a toothpick. Insert a toothpick in the center of the cake. If it comes out clean, the cake is done. If not, cook for a few more minutes.
  8. Remove the cake tin from the pressure cooker and let it cool. Once cool, remove the cake from the tin and slice it in half horizontally.
  9. To make the ganache, heat the heavy cream, chocolate chips, and butter in a saucepan over low heat. Stir until the chocolate and butter have melted and the mixture is smooth. Remove from heat and refrigerate for 15 minutes.
  10. Whisk the ganache with an electric blender until airy and spreadable.
  11. Spread ganache on one half of the cake and sandwich with the other half. Coat the entire cake with ganache, smoothing it with a palette knife.
  12. Garnish with fruits of your choice and sugar before serving.
