Too Hot to Fuss with Dessert? Try Strawberries in Cream Dust (with Gingersnaps!)

A Spectacularly Refreshing, Ultra-Creamy Strawberry Dessert

This dessert is perfect for those nights when company is coming over, and it's too hot to fuss with complicated recipes. Thick yogurt, mixed with cream, gives the dessert a pleasant tang, while brown sugar and vanilla add just enough sweetness to showcase the peak-season strawberries.

Ingredients:

  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 1 pound fresh strawberries, hulled and sliced
  • 1 cup crushed gingersnaps

Directions:

  1. In a bowl, whisk together the yogurt, cream, and vanilla extract until smooth. Transfer to a shallow serving bowl.
  2. Sprinkle the brown sugar on top of the yogurt mixture. Cover and refrigerate for at least 15 minutes, or up to a few hours, to allow the sugar to melt.
  3. Place the crushed gingersnaps in a zipper bag, seal it, and use a rolling pin to coarsely crush the cookies.
  4. Just before serving, use a skewer to make pretty swirls in the melted sugar. Top with some of the sliced strawberries and some of the crushed gingersnaps, reserving the rest for garnish.
  5. Serve chilled and enjoy!

Feel free to swap in your favorite cookie, such as Biscoff, shortbread, or amaretti, to vary the crunch. And when strawberry season ends, you can always try blueberries, raspberries, or blackberries instead!
