Ingredients

  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Directions

  1. Heat a medium-sized skillet over medium heat.
  2. Add olive oil to the skillet and let it heat up.
  3. Add the thinly sliced onion to the skillet and sauté for 2-3 minutes or until softened.
  4. Next, add garlic to the skillet and sauté for 30 seconds.
  5. Add the red and yellow bell peppers to the skillet and sauté for 2-3 minutes or until softened.
  6. Add the sliced zucchini and yellow squash to the skillet and sauté for 2-3 minutes or until tender.
  7. Season the vegetables with dried oregano, dried thyme, salt, and black pepper to taste.
  8. Sauté for another minute to blend the flavors.
  9. Remove from heat and serve immediately.
