Cinnamon Roll Ice Cream Sandwiches
This partnership between cinnamon rolls and ice cream is a match made in heaven. Perfect for a summer afternoon snack, this recipe from General Mills Foodservice is easy to make.
Ingredients:
- Cinnamon roll dough
- Vanilla ice cream
Directions:
- Preheat oven and bake cinnamon roll dough according to package instructions
- Let the cinnamon rolls cool and then slice them in half horizontally
- Add a scoop of vanilla ice cream on the bottom half of each cinnamon roll
- Top with the other half of the cinnamon roll and freeze for at least an hour

Ingredients:
- Frozen pie crust
- Rhubarb
- Sugar
- Vodka (optional)
- Egg yolks
- Unsalted butter
- Heavy cream
Directions:
- Preheat oven and bake pie crusts according to package instructions
- Cook rhubarb, sugar, and vodka in a pot until it becomes a jam-like consistency
- Whisk egg yolks and sugar in a separate bowl and heat with brown butter until it thickens
- Mix heavy cream and rhubarb jam and combine with egg mixture
- Freeze the mixture in an ice cream maker for 20-25 minutes
- Scoop ice cream on each cooled pie crust and freeze for at least an hour before serving
Thai Watermelon Popsicles
Chef Rebecca Peizer adds a Thai twist to watermelon popsicles with the use of kaffir lime leaves, Thai bird chiles, and ginger. Easy to make and can be prepped ahead to have on hand.
Ingredients:
- Watermelon
- Lime juice
- Honey
- Kaffir lime leaves
- Thai bird chiles
- Ginger
Directions:
- Blend watermelon, lime juice, honey, kaffir lime leaves, Thai bird chiles, and ginger in a blender
- Pour mixture into popsicle molds and freeze for at least 3 hours
- Enjoy!
Orange Mint Granita
This sweet treat is easy to make, and orange zest and fresh mint add pops of color to the plate.
Ingredients:
- Water
- Sugar
- Orange juice
- Orange zest
- Fresh mint leaves
Directions:
- Combine water, sugar, orange juice, and orange zest in a pot and heat until sugar has dissolved
- Simmer the mixture for 10 minutes and then let it cool
- Pour mixture into a shallow container and add fresh mint leaves
- Freeze for at least 2 hours, breaking up with a fork every 30 minutes until it becomes slushy
- Serve and enjoy!
