Chipotle Honey Chicken

Ingredients:

  • 4 boneless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp chipotle peppers in adobo sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Chopped cilantro (optional garnish)

Directions:

  1. In a bowl, whisk together honey, soy sauce, chipotle peppers, olive oil, garlic powder, salt, and black pepper.
  2. Place chicken breasts in a baking dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or overnight.
  3. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade and discard any excess marinade.
  4. Grill chicken for 6-8 minutes per side or until cooked through. Garnish with chopped cilantro, if desired.

Mousse Brownies

Ingredients:

  • 1 box fudge brownie mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 1 pkg (8 oz) cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups whipped topping

Directions:

  1. Preheat oven to 350°F. Grease a 9x13-inch baking pan.
  2. In a large mixing bowl, prepare brownie mix according to package directions using the eggs, oil, and water.
  3. Pour into prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool.
  4. In a separate mixing bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped topping.
  5. Spread cream cheese mixture over cooled brownies. Refrigerate for at least 1 hour before serving.

Charred Corn Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/4 tsp salt
  • 3 ears fresh corn, husks removed
  • 1 red bell pepper, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1/4 tsp cumin
  • 1/4 tsp salt

Directions:

  1. Rinse quinoa in a fine mesh strainer and place in a medium saucepan with water and salt. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until water is absorbed.
  2. Preheat grill or grill pan to high heat. Brush corn with olive oil and grill for 3-4 minutes per side or until charred. Let cool, then cut kernels off cob with sharp knife.
  3. In a large mixing bowl, combine cooked quinoa, grilled corn, diced bell pepper, red onion, and cilantro.
  4. In a separate bowl, whisk together olive oil, lime juice, cumin, and salt. Pour dressing over salad and toss to combine.
  5. Chill in refrigerator for 30 minutes before serving.
