Ingredients:

  • 1 tomato

  • 2 slices of bread or a bagel of your choice

Directions:

  1. Cut the hard-boiled eggs into small pieces and mix with low-fat mayo.
  2. Cut avocado and tomato into slices.
  3. Toast bread or bagel and spread egg mixture on one side.
  4. Layer slices of avocado, tomato, spinach, and top with Spicy Sauce.
  5. Add the other slice of bread or top half of the bagel and enjoy.
