Dosa and Idli Batter Recipe
If you're a fan of South Indian cuisine, you probably know that Dosa and Idli are two quintessential dishes that are enjoyed by people worldwide. These dishes are beloved for their crispy texture and fluffy interior, and they are perfect for consuming at any time of the day. However, not many people can make the batter correctly. Here are some useful tips to ensure your Dosa/Idli batter is flawless every time.
Ingredients
- 2 cups Idli rice or parboiled rice
- 1/2 cup urad dal
- 1 tsp fenugreek seeds
- Water as required
- Salt to taste
Directions
- Rinse the rice and urad dal in water and soak them separately for 4-5 hours.
- In a grinder, first grind the urad dal along with fenugreek seeds by adding water gradually to a smooth paste. Transfer it to a container and keep it aside.
- Next, grind the rice by adding water gradually until it forms a smooth paste. Make sure to grind it in batches. Transfer the ground rice mixture to the same container as the urad dal mixture. Add salt to taste and mix the batter well.
- Cover the container and keep it in a warm, undisturbed place to ferment for 8-12 hours or until the batter doubles in volume. Do not disturb the batter while it is fermenting.
- After fermentation, mix the batter gently using a ladle to incorporate air and ensure an even distribution of ingredients.
- Your batter is now ready to be used to prepare delicious Dosas and Idlis. Heat a pan and grease it with oil. Pour a ladleful of batter and spread it into a thin, circular shape. Allow it to cook on low-medium flame. Once the bottom is golden brown, flip it over using a spatula and cook the other side. Serve hot with sambar or chutney.
That's it, folks! Follow these steps, and you'll be able to make delectable Dosas and Idlis that will tantalize your taste buds.
