Shrimp Primavera Recipe
This shrimp primavera recipe is a delightful combination of juicy shrimp, colorful veggies, and a light cream sauce. It's perfect for a fun weeknight dinner and can be prepared in just 30 minutes!
Ingredients:
- 8 ounces linguine or spaghetti
- 1 pound medium shrimp, peeled and deveined
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- 1 teaspoon kosher salt, divided
- 3 tablespoons olive oil
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 shallot, thinly sliced
- 1 cup broccoli florets
- 1 red bell pepper, sliced into thin strips
- 1 carrot, julienned
- 1 cup frozen peas
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon dried dill
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
Directions:
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and toss with a bit of olive oil.
- In a medium bowl, combine the shrimp, garlic powder, dill, and 1/2 teaspoon of salt. Toss to coat.
- In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat. Add the asparagus, shallot, broccoli, bell pepper, carrot, and 1/2 teaspoon of salt. Cook for 4-5 minutes until the asparagus is tender and bright green.
- Add the shrimp and peas to the skillet and continue to cook for an additional 1-2 minutes until the shrimp are opaque and cooked through. Remove from the heat and transfer the shrimp and veggies to a bowl.
- Wipe out the skillet and melt the butter over medium heat. Add the minced garlic and flour and whisk together for 1 minute.
- Add a splash of milk and whisk until the sauce starts to thicken. Gradually add in the rest of the milk, whisking constantly, until the sauce is smooth and thickened, about 4-5 minutes.
- Stir in the dried dill and Parmesan cheese until the cheese has melted. Add the cooked pasta, shrimp, and veggies to the skillet with the sauce and toss everything together until well combined.
- Taste and add more salt if needed. Serve warm, garnished with more Parmesan cheese and freshly ground black pepper.
Note: Shrimp primavera is best served the day it is made. Store leftovers in an airtight container in the refrigerator for up to 2 days.
