Healthy Oatmeal Raisin Cookies Recipe

Ingredients:
- 1 cup old-fashioned oats
- 1 cup whole wheat flour
- 1/2 cup unsweetened applesauce
- 1/2 cup raisins
- 1/3 cup honey
- 1/4 cup coconut oil, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
Directions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
- In another bowl, beat the egg and add the applesauce, honey, melted coconut oil, and vanilla extract. Mix until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the raisins.
- Scoop the dough using a tablespoon and drop it onto the prepared baking sheet. Flatten the dough slightly with your fingers.
- Bake the cookies in the preheated oven for 12-15 minutes, or until golden brown.
- Allow the cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
