Besan Chilla

- 1/4 cup crumbled paneer (optional)

Directions:
- In a bowl, mix besan, water, red chilli powder, turmeric powder, cumin powder and salt to make a smooth batter.
- Add chopped vegetables and paneer to the batter and mix well.
- In a non-stick pan, heat oil and pour a ladleful of batter into it.
- Spread the batter evenly to make a thin pancake.
- Flip and cook both sides until golden brown.
- Serve hot with chutney or sauce of your choice.
Quinoa and Lentil Salad
A nutritious and satisfying dish featuring a blend of cooked quinoa, lentils, and an assortment of fresh vegetables. This salad is rich in protein, fibre, and essential nutrients, making it a popular choice for health-conscious individuals.
Ingredients:
- 1 cup cooked quinoa
- 1 cup cooked lentils

- 4 slices of bread
- 2 boiled and mashed potatoes
- 1/2 cup chopped vegetables (onion, tomato, capsicum)
- 2 tbsp green chutney
- 2 tbsp tomato ketchup
- 1/2 tsp red chilli powder
- 1/2 tsp chaat masala
- 2 tbsp oil
- Salt to taste
Directions:
- In a bowl, mix mashed potatoes, chopped vegetables, red chilli powder, chaat masala and salt.
- Spread green chutney on two slices of bread and tomato ketchup on the other two slices.
- Spread the potato mixture on two slices of bread and cover with the other two slices to make two sandwiches.
- In a non-stick pan, heat oil and place the sandwiches on it.
- Press with a spatula and cook until crispy and golden brown on both sides.
- Serve hot with more chutney and ketchup if desired.
