There are many ways to enjoy eggs, but nothing quite compares to a delicious plate of Eggs Benedict. This popular breakfast and brunch dish is typically made with toasted English muffins, over-medium eggs, and a rich hollandaise sauce. Here's how to make this tasty dish at home:
Ingredients
- 4 English muffins, split in half
- 8 slices of Canadian bacon or ham
- 8 eggs
- 1/2 cup unsalted butter
- 3 egg yolks
- 1 tablespoon lemon juice
- Pinch of cayenne pepper
- Salt and pepper to taste
Directions
- First, toast the English muffins and keep them warm.
- Heat a skillet over medium heat and fry the Canadian bacon or ham until slightly crispy. Keep warm.
- Fill a large saucepan with at least 2 inches of water and bring to a boil. Reduce heat to simmer and add a tablespoon of vinegar.
- Crack an egg into a small bowl or ramekin. Lower the bowl into the water, then use a spoon to swirl the water around the egg. Repeat with remaining eggs, adding no more than four at once.
- Cook the eggs for about 3 minutes or until the whites are set but the yolks are still runny. Use a slotted spoon to remove the eggs and dab with a paper towel to remove excess water.
- While the eggs cook, make the Hollandaise sauce. Melt the butter in a small saucepan over low heat. In a separate bowl, whisk together the egg yolks, lemon juice, cayenne pepper, salt and pepper.
- Place the bowl over a pot of simmering water and continue whisking until the mixture thickens and doubles in volume. Remove from heat and slowly whisk in the melted butter in a steady stream.
- Assemble the dish by placing two halves of an English muffin on a plate and topping each half with a slice of Canadian bacon or ham and a poached egg. Drizzle with Hollandaise sauce and serve immediately.
