Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can San Marzano tomatoes, crushed
- 1 cup baby kale
- 6 eggs
- Salt and pepper, to taste
- Feta cheese, crumbled (optional)
- Parsley, chopped for garnish
Directions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic, cumin, and paprika and cook until fragrant, about 1 minute.
- Add crushed tomatoes, kale, salt, and pepper. Simmer for 10 minutes until thickened.
- Using a spoon, create 6 wells in the tomato sauce. Crack an egg into each well and sprinkle with feta cheese (optional).
- Cover the skillet and cook over low heat for 10-15 minutes or until the eggs are set.
- Sprinkle with parsley and serve hot with crusty bread or pita bread.
Note: You can customize this recipe based on your personal preferences and dietary needs. For a vegan version, you can swap eggs with tofu or chickpeas. You can also add other vegetables like bell peppers or mushrooms for extra nutrition.
