Steamed Whole Seabass in Chili Bean Sauce
Ingredients:
- 1 whole seabass (about 2 lbs.), gutted and scaled
- 1 tbsp. ginger, sliced
- 3 cloves garlic, sliced
- 1 tbsp. chili bean sauce
- 1 tbsp. rice wine
- 2 stalks scallions, sliced
- 2 tbsp. vegetable oil
- Salt to taste
Directions:
- Score the fish on both sides.
- Stuff the fish cavity with ginger and garlic.
- In a small bowl, mix chili bean sauce, rice wine, and vegetable oil.
- Spread the sauce mixture over the fish evenly.
- Steam the fish for about 30 minutes, until the meat flakes easily with a fork.
- Garnish with scallions and serve.
Bacon and Red Cabbage Fried Rice
Ingredients:
- 4 cups cooked rice, chilled
- 6 slices of bacon, diced
- 1/2 red cabbage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp. vegetable oil
- 2 tbsp. soy sauce
- Salt and pepper to taste
Directions:
- Heat up a wok or large frying pan over medium-high heat.
- Add diced bacon and cook until crispy.
- Add sliced onion and minced garlic. Stir-fry until fragrant and tender.
- Add sliced red cabbage and stir-fry until slightly wilted.
- Add the chilled rice and stir-fry until heated through.
- Add soy sauce, salt, and pepper to taste.
- Transfer to a serving dish and serve.
