Sweeten Up Your Easter with These Delicious Pie Recipes
Fact: Easter is one of the sweetest holidays of the year. Between the chocolate bunnies, the baskets brimming with Easter candy, and all those Easter desserts to serve for brunch, you might be wondering if there's such a thing as too many sweets. We say no bunny will ever turn down another Easter treat! There's always room for more, especially when it's one of these Easter pies.
If you think about it, Easter is the perfect time for the best pie recipes. It's right at the beginning of spring, so citrus is still in season and you can enjoy all those lemon desserts at their peak. If you're lucky and the weather is warming up, you can make spring desserts like fruit pies and rhubarb recipes. Or if it's still chilly, there's all those coconut desserts and chocolate desserts that are right for any time of year and yet perfectly timely for the holiday. (Has anyone ever turned down a slice of Oreo pie ever? We don't think so.)
Hosting a crowd? Try a giant slab pie. No room in the oven? Try a no-bake recipe. Not sure who likes what? Make a classic chess pie that will please every palate. These Easter pie recipes are sure to be a hit and then you'll wonder why you ever questioned yourself in the first place. Of course you should have a pie (or two or three!) for a sweet end to Easter dinner. So hop to it!
Key Lime Pie
Key lime is one of Ree Drummond's favorite flavors and can you blame her? It's the perfect balance of sweet and tart, especially with that tasty graham cracker crust.
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 7 tablespoons butter, melted
- 3 cups sweetened condensed milk
- 3/4 cup key lime juice
- 1 tablespoon lime zest
- 1/2 cup heavy cream
- 1 tablespoon sugar
Directions:
- Preheat the oven to 350°F.
- Combine graham cracker crumbs, sugar, and butter in a bowl. Press evenly into the bottom and sides of a 9-inch pie pan.
- Bake in preheated oven for 8-10 minutes. Let cool before filling.
- In a medium bowl, whisk together condensed milk, lime juice, and lime zest.
- Pour mixture into the cooled pie crust. Bake for 10-15 minutes or until filling is set.
- In a mixing bowl, beat together heavy cream and 1 tablespoon sugar until soft peaks form.
- Spread whipped cream on top of the cooled pie. Garnish with additional lime zest if desired.
- Refrigerate until ready to serve.
German Chocolate Pecan Pie
Chocolate, coconut, and pecans make the ultimate decadent dessert. Plus, assembling the pie version is way easier than a layer cake and you still get all the amazing flavor.
Ingredients:
- 1 unbaked pie crust
- 3/4 cup granulated sugar
- 1/2 cup butter, melted
- 3 eggs
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup light corn syrup
- 1/2 cup chopped pecans
- 1/2 cup sweetened shredded coconut
- 1/4 teaspoon salt
Directions:
- Preheat oven to 350°F.
- In a mixing bowl, whisk together sugar, melted butter, and eggs until well combined.
- Add flour, cocoa powder, and salt. Mix well.
- Stir in corn syrup, pecans, and coconut.
- Pour mixture into the unbaked pie crust.
- Bake for 50-60 minutes or until set.
- Let cool before serving.
Strawberry Rhubarb Pie
Is there anything more spring than this? We think not! And guess what? If they aren't in season yet, you can use frozen strawberries and rhubarb!
Ingredients:
- 1 double pie crust
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 cups fresh rhubarb, chopped
- 4 cups fresh strawberries, sliced
- 2 tablespoon unsalted butter
Directions:
- Preheat oven to 425°F.
- In a large bowl, whisk together sugar, cornstarch, and salt.
- Add rhubarb and strawberries to the bowl. Toss until evenly coated.
- Pour mixture into the bottom crust of the pie.
- Cut butter into small pieces and top the fruit mixture with the butter pieces.
- Place the top crust on the pie, cutting slits in the top to allow steam to escape.
- Bake for 15 minutes. Then reduce temperature to 375°F and continue baking for 45-55 minutes or until crust is golden brown and filling is bubbly.
- Let cool before serving.
