Sambhar

Ingredients:

  • 1 cup split pigeon peas (toor dal)
  • 2 cups mixed vegetables (carrot, pumpkin, brinjal, drumstick, pumpkin, okra)
  • 1 medium-sized onion diced
  • 2-3 ripe tomatoes chopped
  • 2 green chillies chopped
  • 1 tablespoon sambhar powder
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon oil
  • Salt to taste

Directions:

  1. Wash the lentils and soak them in water for half an hour. Pressure cook the lentils with 4 cups of water until soft and mushy. Mash well and set aside.
  2. Heat oil in a pan and add the onions, tomatoes and green chillies. Cook until the onions are translucent.
  3. Add the mixed vegetables, turmeric powder, and salt. Add enough water to cover the vegetables and let it cook for 10-15 minutes or until the vegetables are tender.
  4. Add the sambhar powder and mix well. Cook for a minute until the raw smell of the powder goes away.
  5. Add the mashed lentils to the pan and bring it to a boil. You can add more water if required. Let it simmer for 5-10 minutes until everything combines well.
  6. Check for seasoning and adjust as per taste.
  7. Garnish with coriander leaves and serve hot.

Kerala Fish Curry

Kerala Fish Curry or Meen Curry is a spicy curry made with fresh fish, coconut milk, and spices. It is easy to make and tastes heavenly. Depending on the type of fish and the amount of coconut milk used, one serving of this dish may have around 100-150 calories per 100 grams. Here's the recipe:

Ingredients:

  • 500g fish fillets (kingfish or tilapia)
  • 1 onion thinly sliced
  • 2-3 cloves of garlic minced
  • 1 small piece of ginger grated
  • 3-4 green chillies slit
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fenugreek seeds
  • 1/2 cup thick coconut milk
  • 2 tbsp oil
  • Salt to taste

Directions:

  1. Clean and cut the fish into preferred size and sprinkle with salt and keep aside for 20 mins.
  2. Take a deep-bottomed pan and heat 2 tbsp oil. Add sliced onions, grated ginger and minced garlic. Saute till onions are translucent. Add green chillies and saute for a minute.
  3. Mix turmeric powder, chilli powder, coriander powder, and cumin powder with a little water to form a paste. Add to the pan and saute for a minute.
  4. Add fenugreek seeds and saute for 30 seconds.
  5. Add coconut milk and 1/2 cup of water, mix well and bring to a simmer.
  6. Add the fish pieces and cook for 10-15 minutes or until the fish is cooked and the curry is thickened.
  7. Check for seasoning and adjust as required.
  8. Garnish with coriander leaves and serve hot with steamed rice.
