Healthy and Delicious Oatmeal Banana Bread Breakfast Cookies
Who says cookies can't be eaten for breakfast? With this gluten-free oatmeal banana bread breakfast cookie recipe, you can enjoy a sweet and nutritious start to your day. Inspired by Love and Lemons Every Day, these quinoa-based cookies are loaded with healthy ingredients and are easy to make.
Ingredients:
- 1 tablespoon ground flaxseed
- 2 tablespoons water
- 1 cup oat flour
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cooked quinoa
- 1/2 cup chopped nuts (such as pecans or almonds)
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1 ripe banana, mashed
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil
Directions:
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a small bowl, combine ground flaxseed and water and set aside.
- In a large mixing bowl, whisk together oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- In another mixing bowl, combine cooked quinoa, chopped nuts, almond butter, maple syrup, mashed banana, vanilla extract, and melted coconut oil. Add the flaxseed mixture and stir to combine.
- Pour the wet mixture into the dry mixture and stir until well combined.
- Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets and press down gently to flatten. Bake for 18-22 minutes, or until golden brown.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
