Monday Night Football Match-up Recipe: Philly Cheesesteak Quesadillas
Description:
This Philly-inspired dish is a fusion of two classics, the cheesesteak and the quesadilla.
Ingredients:
- 1 lb. thinly sliced sirloin steak
- 1 green pepper, sliced
- 1 onion, sliced
- 8 oz. Provolone cheese, shredded
- 4 flour tortillas
- 2 tbsp. vegetable oil
- Salt and pepper to taste
Directions:
- Heat oil in a large skillet over medium-high heat.
- Add sliced steak and cook until browned on both sides, then remove from the pan and set aside.
- Add sliced green pepper and onion to the pan and cook until softened.
- Return the cooked steak to the skillet and mix with the veggies.
- Lay out the tortillas on a clean surface and divide the steak and veggie mixture among them, placing it on one half of each tortilla.
- Sprinkle shredded Provolone on top of the steak and veggies, then fold the other half of the tortilla over to enclose the filling.
- Cook each quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is crispy.
- Serve hot and enjoy while watching the Philadelphia Eagles face the Kansas City Chiefs tonight!
