This delicious chickpea curry recipe is perfect for lunch or dinner. It's a great way to enjoy a vegan meal and get enough protein. Follow these simple instructions to cook a chickpea curry.
Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp paprika
- 1/4 tsp turmeric
- 1 tsp garam masala
- 1 can tomato paste
- 1/2 can of coconut milk
- salt and pepper to taste
Instructions
- Heat oil in a large pan over medium heat and sauté onions until soft.
- Add garlic, ginger, cumin seeds, coriander powder, paprika, turmeric, and garam masala. Cook for 30 seconds, stirring consistently.
- Add tomato paste, coconut milk, and chickpeas. Mix well and bring to a simmer.
- Season with salt and pepper to taste. Cook for an additional 10-15 minutes until the chickpeas are tender and the sauce is thickened.
- Serve over rice or with naan bread. Enjoy!
