Enfrijoladas
Enfrijoladas are a delicious Mexican comfort food that can be enjoyed at any time of day. Similar to enchiladas, enfrijoladas involve tortillas that are lightly fried, filled, and rolled up. The unique difference lies in the bean sauce that is used to dip the tortillas, resulting in a slightly spicy and flavorful dish.
Ingredients:
- 2 cans of black beans, drained and liquid reserved
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1-2 chipotle peppers in adobo sauce
- 1 tsp oregano
- 1 1/4 cups chicken or vegetable stock, divided
- Salt
- 12 corn tortillas
- 2 tbsp olive oil
- 1 cup of queso fresco, mozzarella, or Monterey Jack cheese, crumbled or shredded
- Avocado slices, radishes, cilantro leaves, and toasted pumpkin or sesame seeds for garnish
Directions:
- Using a blender, combine the black beans, reserved liquid, onion, garlic, chipotle peppers, oregano, and 1 cup of stock. Puree until very smooth. If desired, add an additional chipotle pepper to taste and puree again.
- Heat a large saucepan over medium heat and add the olive oil. Pour in the sauce and cook for 5 minutes, stirring frequently to prevent the beans from sticking to the pan. Add a generous pinch of salt and keep the sauce warm.
- Brush a tortilla with olive oil and place another on top, brushing with more oil. Continue to brush and stack the tortillas in two piles of 6 each, pressing down on top of each stack to ensure both sides are coated with oil.
- Heat a small skillet over medium heat until hot. Cook each tortilla for about 30 seconds on each side or until the edges are starting to crisp. Fold each tortilla in half and set aside on a baking sheet.
- Tuck 1 heaping tablespoon of cheese into each folded tortilla. Heat the sauce over low heat and stir well. If the sauce has thickened, add 1/4 cup of stock or water to reach a creamy consistency.
- On each plate, ladle 1/2 cup of sauce and set 3 filled tortillas on top. Ladle more sauce on top of the tortillas and garnish with avocado slices, radishes, cilantro leaves, queso fresco (or mozzarella or Monterey Jack cheese), and toasted seeds.
