Creamy No-Bake Chocolate and Vanilla Pudding Cake
Get ready to be showered with compliments because this no-bake treat is just that good. Layers of cinnamon graham crackers, chocolate pudding, and vanilla pudding come together to create a delectable "cake" that needs an overnight rest in the fridge to set. It's then finished with whipped cream and a dusting of cocoa powder and cinnamon for the perfect dessert.
Ingredients:
- 14-16 cinnamon graham crackers
- 1 package (5.9 ounces) instant chocolate pudding mix
- 1 package (5.1 ounces) instant vanilla pudding mix
- 3 cups whole milk
- 2 cups heavy cream
- 1/2 cup confectioners' sugar
- 1/4 teaspoon salt
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon ground cinnamon
Directions:
- In a bowl, whisk together the chocolate pudding mix and 1 1/2 cups of the whole milk until thickened. In another bowl, whisk together the vanilla pudding mix and the remaining 1 1/2 cups of whole milk until thickened.
- In a 9-by-13-inch baking dish, arrange one layer of cinnamon graham crackers on the bottom, breaking them into pieces as needed to cover the entire dish (6 to 7 crackers total).
- Spread the chocolate pudding evenly over the graham crackers.
- Arrange another layer of graham crackers over the chocolate pudding, breaking them into pieces as needed (7 to 8 crackers total).
- Spread the vanilla pudding evenly over the graham crackers. Cover the dish with plastic wrap and refrigerate overnight, or for up to 2 days, to allow the pudding to set.
- When ready to serve, use an electric mixer to whip the heavy cream, confectioners' sugar, and salt together until soft peaks form, about 1 to 1 1/2 minutes.
- Spread the whipped cream evenly over the vanilla pudding.
- Using a fine-mesh sieve, dust the cocoa powder and cinnamon over the whipped cream.
- Slice and serve the pudding cake cold.
