Winter Special Parathas
Cauliflower Paratha
This paratha is a winter favorite and is loved by everyone, with the filling made of shredded cauliflower that's flavored with spices. It's best enjoyed with a hot cup of Masala Chai and a dollop of butter.
Ingredients:
- 2 cups Wheat Flour
- 1/2 cup Water
- 1/2 cup Cauliflower (shredded)
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/4 tsp Turmeric Powder
- 1 tsp Garam Masala Powder
- Salt to taste
Directions:
- Mix wheat flour, salt, and water to make a soft dough.
- In a separate bowl, mix shredded cauliflower with cumin powder, coriander powder, turmeric powder, garam masala powder, and salt.
- Divide the dough into small balls and flatten them using a rolling pin into small circles.
- Place 1-2 tablespoons of cauliflower mixture in the center and bring the edges together to seal the filling inside.
- Roll the paratha gently and cook on both sides until golden brown.
- Serve hot with butter and Masala Chai.
Stuffed Matar Kachori
Matar Kachori is a crispy and flavorsome pastry that's filled with spiced green peas. It's a satisfying breakfast and pairs well with chutneys.
Ingredients:
- 2 cups All-Purpose Flour
- 1/2 cup Ghee
- 1 cup Green Peas (boiled and mashed)
- 1/2 tsp Garam Masala Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/4 tsp Turmeric Powder
- 1/2 tsp Red Chilli Powder
- Salt to taste
Directions:
- Mix all-purpose flour, ghee, and salt, and knead the dough with water.
- In a separate bowl, mix mashed green peas, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt.

- 2 cups All-Purpose Flour
- 1/2 cup Ghee
- 1 cup Whole Mung Beans (boiled and mashed)
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Garam Masala Powder
- Salt to taste
- Oil for frying
- 4 Potatoes (peeled and cubed)
- 2 Tomatoes (chopped)
- 1 Onion (chopped)
- 1 tsp Ginger (grated)
- 1 tsp Garlic (minced)
- 1 Green Chili (chopped)
- 1/2 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 1/2 tsp Coriander Powder
- 1/4 tsp Garam Masala Powder
- Salt to taste

- Add chopped onions, grated ginger, minced garlic, and green chili, sauté until onions turn translucent.
- Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes turn mushy.
- Add potatoes and cook until they are soft but not mushy.
- Add garam masala powder and cilantro, mix well and serve hot with Kachori.
Methi Paratha
Methi Paratha is a flavorful and nutritious paratha that's made with fenugreek leaves and whole wheat flour. It's a popular Gujarati dish and pairs well with pickle or yoghurt.
