Spinach and feta stuffed chicken breast recipe
This recipe is perfect for a filling and healthy dinner. Chicken breast, spinach, and feta cheese come together to create a mouthwatering dish.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup chopped fresh spinach leaves
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- In a mixing bowl, combine chopped spinach, feta cheese, minced garlic, salt, and black pepper. Mix until well combined.
- Cut a pocket in each chicken breast, being careful not to cut through the other side. Stuff each chicken breast with the spinach and feta mixture.
- Season the outside of the chicken breasts with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the stuffed chicken breasts and cook for 2 minutes on each side, or until browned.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
